This recipe combines traditional Mexican food flavor with quick and easy
cooking! Your family will love this taco pie!

Ingredients:
2 lbs. Ground Beef
One 29-30oz. Can of Enchilada Sauce (Mild, Medium or Hot)
1 Large Onion, diced
4 Cups Cheese, grated (Monterey Jack, Cheddar or your choice)
One 4 oz. Can Diced Green Chilies (Optional)
1/4 to 1/2 Large Bag Tortilla or Corn Chips, crumbled

Directions:
1. Preheat the oven to 350 degrees F.
2. Crumble the ground beef and brown it in a frying pan. Drain.
3. Spray a 9X13 inch baking dish with Pam.
4. Spoon several tablespoons of the enchilada sauce into the baking dish and
spread it to cover the bottom of the dish.
5. Put a layer of chips over the sauce.
6. Spread the ground beef evenly over the chips.
7. Sprinkle the onions and green chilies over the ground beef.
8. Spread two cups of cheese over the onions and chilies.
9. Spoon half of the enchilada sauce over all.
10. Place another layer of chips over the sauce.
11. Pour the remaining enchilada sauce over the chips.
12. Sprinkle the remaining two cups of cheese over the top.
13. Cover the dish with foil, tenting so the foil does not touch the cheese.
14. Bake at 350 degrees F for 45-60 minutes or until cooked through and bubbling.
15. Remove the foil carefully and bake the dish an additional 10-15 minutes or until the cheese is lightly browned.

Yield: 6 to 8 servings. Serve with salsa, sour cream and guacamole. Add a green salad topped with diced tomatoes. Top off the meal with chilled melon balls! Delicious!
